Vineyards

This wine comes from the appelation Clos de Vougeot, the celebrated grand cru in the internationally renowned Côte de Nuits vineyards. The Clos de Vougeot was founded in the 12th century by monks from the Abbaye de Cîteaux, which remained its owner until 1789. With 50 hectares in a single plot (the largest grand cru appellation in Burgundy) shared amongst 80 proprietors, it is to this day surrounded by the walls which enclosed it five centuries ago. The Renaissance-style Château du Clos de Vougeot is an exceptional historic monument whose current owners are the Chevaliers de Tastevin.

Soil

The soil is made up chiefly of limestone with varying amounts of clay.

Vinification and Ageing

Coming from such an exceptional soil, the grapes are hand-sorted on arrival before being placed in concrete or oak vats (according to the vintage) for maceration and alcoholic fermentation for about three weeks. The pressed juice is then placed in oak barrels (70% new oak, 30% one yearl old barrels). Ageing lasts between 18 and 20 months, during which time malolactic fermentation takes place. The wine is then bottled after light filtering.
